It's the same emulsion. Kodak tests each batch and when it hits the right speed and color balance, it packages a bunch of film as "professional" and ships and stores it under refrigeration so it stays that way. "Amateur" Kodachrome is allowed to simply ripen on the shelf. I think of it as buying apples in the grocery store--if you buy it too early in its cycle, it looks a little green, but shifts to red as time goes on. If you're shooting something where color rendition is critical, the "professional" version eliminates that variable, but the "amateur" version works fine for most situations, and is cheaper.
