Digital will yield better prints than Flat bed scanner. Better than my KM5400 which was among the best in the day.
Today My D800 nikon on a tripod in good light yields better prints than I could ever get with 4x5 color neg at 11x17 size. Up close sniffing yields perfect sharpness and tone reproduction and NO grain/noise.
I will never go back to color film, but my film darkroom is open, Delta 100 and Bergger 400.

I am planning to use my 16mp Pentax K-5iis together with the SMC Pentax A50mm f2.8 macro for scanning medium format film. I believe that I have to use stitching in order to get better results than I already am getting from the V750.
Try it first w/o stitching. You may be very happy with your results.
I've used the stitching software in LR before to create panos from digital images and it worked well for me.

A few days ago I ordered a Plustek 6x7 holder, which is the last hardware I need for my DSLR scanning rig. I will surely start up with scanning w/o stitching, to see what kind of results my gear is capable of.
