I guess I am now convinced that I need a Plaubel Makina 67/670.

A colleague of mine is selling his: light meter not working, looks quite used, with paint loss here and there; he even engraved his name on the back of the camera (!). Apparently, servicing the camera, including fixing the light meter, would cost me around 3-400 euros from a reputable shop in Germany. I am thus not ready to offer more than 500 euros for such a specimen, so to end up spending max 8-900 euros for a used-looking but working camera.
Pro: I could start using as it is, using my iPhone as light meter, relatively cheap (if my offer gets accepted, that is.)
Cons: looks used, and that engraving in the back puts me off, needs to be serviced to be fully functional

On the other hand, a beautiful looking Makina 670 has appeared from the wild, splendid conditions really, with hood and manual and whatnot, seller asking 1600, he assures everything is in order, and gives me a 7 days return period.
Pro: beautiful, shiny, newer model, comes with all the accessories
Cons: expensive, 7 days only for returning the camera (might not be enough to full test it), would be a internet sale with all the risks linked to that

If you had the money, which one would you consider and why?

€1600 is expensive! One area to look at, even on a mint condition camera, is the light seals. Do you know that Plaubel in Germany can service the cameras? They do an excellent job. I would send them an email about the cheaper camera. It doesn't matter what a camera looks like as long as it functions well.

IMHO the 670's extra rubberized ring around the focus knob and the horizontal ribs on the finish greatly improve the handling, not to mention the hot shoe and 220 capability.

I'd not pay the extra €700 solely for that though as both the 67 and 670 give the same result.

Yes, I sent them an email. The total costs of repair + CLA + shipment should be around 550 euros, which is not cheap at all. And I would still end up with a not-so-good looking camera.
