I want to get the VC Ultron 40mm f2 pancake lens for my F100. Which lens do I need to maintain full functionality of the camera (except AF of course.). Thanks!

SL 2 iterations are chipped. The original SL is not.
Given the size of the F100 I’d skip the pancake and go with the SL II S which isn’t pancake but focuses to 0.25m without a closeup lens. Otherwise they are the same optics.

Is a chip necessary for the F100 to work properly with the lens such as in aperture priority mode?

According to nikonians.org, the F100 will work with non-chipped (AI, AI-S) lenses in M and A modes only. Also, you won't have matrix metering with a non-chipped lens.
I'm pretty sure an AI or AIS lens will work in aperture priority mode on an F100 even without a chip, but only in center weighted mode, not matrix.
