These are quite old, from a bakery in Santa Rosalia, Baja California Sur. The baker has a good shop and sells a lot of baked goods up and down the peninsula. He also takes in street kids and teaches them a trade. He has a nursery for bakers. And his bakers are in demand in Baja California. He was kind enough to let me photograph his operation. And all the folks there were really kind, polite and friendly. A smile and "Con permiso?" works wonders.
The rolls are "Bolillos" which is a corruption of "Boleos." BOLEO was an anacronym for the Belgian mining company which was once there. The town also has a steel church designed and built for a world's fair by Gustav Eiffel of the tower fame.
