Every year in December there's the Bastogne Historical Walk in Belgium, to commemorate those that fought in the Battle of the Bulge.
A good chance to shoot a lot of WW2 re-enactors and their vehicles in historic settings.
Apart from that I like to take pictures of snowy landscapes and animals.

I really like the quality of sunlight in winter - you get this very flat (as in horizontal) light which can be very effective. An example:
Shot with my GRD2. This was actually April in Stockholm, so not technically winter, but the light still had that quality.

KEH is right there are lots of good shots, just that they are at 7:30 AM and 4:05 PM. I also seem to shoot more color in the winter. I have a glove friendly camera, too. I does get cold in California maybe down to 41 F at 7:30 in the morning.

HCB said live and life will give you pictures.
Get up, turn off that computer, get your camera, set your film to 800 or higher and go out. You'll be surprised how many interesting pictures you'll bring back.

Yeah, I have been taking photos in the street's at night with only the street lights, but there are very few people around because it's cold and dark so these are what I've come up with.
