Can any one help me with to which is the widest Jupiter that will fit on any of my Canon bodies. I just want a wider lens than my 25mm, until I can get a 19mm.

what I know about FSU wider angle (ie 35 mm or less) glass goes something like this. Most protrude into the camera enough to be an issue for some shutters. I'd really go slowly here in case you make a decision that affects your camera's shutter. I'm interested to know if any other RFF members have better information.
Only FSU lenses that I'm aware of are the Russar 20/5.6 and the Orion 28/6. Both are expensive for FSU lenses and given the costs of new Voightlander lenses, you'd probably do better getting one of them.
There's some info on them on the cameraquest website, I believe.
I had a IVSB2 and there were no problems using/mounting a '79 J-12 which seems to have the biggest rear element amongst FSU lenses. I've never seen an Orion 15 [28mm] or Russar [20mm] in the flesh but in pictures they seem to have smaller rear elements than a J-12. Please correct me if I'm wrong.

The orion is no problem on the Canon but is a slowish 28/6. Thr rear element is covered by a "normal" cap. The Russar, I haven't tried but it does appear to have a rear element no larger than the Canon 25 and has good reviews from Stephen Gandy who also seems to prefer the FSU 20 finder. http://www.cameraquest.com/russian.htm
