Bokeh is actually a beautiful poetic word.... it sounds good and it can describe anything.
"the bokeh of your eyes look rather magnificent tonight darling"

see you can use it anywhere, try replacing it with GAS .....

Especially true when you consider that film (or perhaps plates) are the original digital medium. The halide crystals turn black (once developed) once a threshold of an "amount" of light reachs them. It is a reaction that happens or not, ie on or off. Our eyes will "see" various shades of grey depending on the density of those that have reacted. However it is still digital.
