Does anyone know anything about the Canon Rapid Winder (i.e. with which models it is compatible) or the Camera Holder with spirit level (i.e. is it a grip/what models is it compatible with?). Thanks!
I use the Rapid Winder on my Canon III-A. The Rapid Winder will fit most Canon bottom load cameras made after 1950 (or so). Take a look at the Canon Museum to see what these models are.
As for the camera holder, Canon made several different types of camera holders so it depends which camera model you're talking about.

That's correct, Canon never made a trigger-wind for the P.
As for the type of holder in the KEH ad, see the "Canon Rangefinder Holder" thread started by CanonRfinder (Peter Kitchingman) for more info. Everything you want to know about Canon camera holders is described there.
The grip for the rapidwinder attaches as shown in the photo. It adds bulk, but makes the arrangement much easier to handle. Canon IIF2 with 35mm f:2.8 lens
Ihave a later model holder for V and L models marked L.Idon't remember if it fits the P. By the look of it @KEH one must fit older Canon models like the bottom loader
