Are there any 5x7 SLRs?

Mentor made 13x18cm and 18x24cm versions of several of their models. I suppose that Thornton Pickard and other British makers also went up to that size.
 
Further to Godfrey's post, there were several different models of the 5x7 Graflex, some with rotating back, some horizontal only.
 
Didn't Edward Weston sometimes use a 5x7 Graflex (or maybe it was a 4x5) and copy the negatives on 8x10 for contact printing?

That is a bit unlikely, as that is no plate format. If any, that would be full plate (6 1/2 x 8 1/2") or its metric equivalent (18x24cm), or even 8x10" - all of them were in Graflex catalogues.

LF SLRs beyond 5x7" obviously were rare, but they do exist.

Unlikely, yes - but with plates you could make any size, provided you make holders to fit the camera. At least in theory. :)

This particular one, is german (Görlitz) according to the text and photos, then perhaps a reasonable guess is 18x24 cm plates or film.

Yup. Assuming regular lens board and shutter knob sizes, that is one up from the 13x18 Mentors, probably 18x24cm, the largest size listed in the catalogues I own.
