Slightly off topic but I'm awaiting a folding plate camera that takes 6.5 x 9cm pack film, will 2 1/4 x 3 1/4 film work?

No. 2 1/4 x 3 1/4 inches is 5.715 x 8.255 cm.

Pack film hasn't been around since the 90s :\
The film in them was on a much thinner base than roll/sheet film.

I shoot exclusively with Fomapan 100 in 4x5 (mainly for the price)
I develop it in HC-110, B, 5:30m at 20C with good results.

And I also use it in 135 and 120 formats for most things.
