Banteay Srei is one of the best temples in the complex to visit - it's smaller, on a much more human scale, and it is remarkably well preserved all things considered. Most of the other temples are of a beige-gray stone- Banteay Srei is brick-colored, and the stone is much harder and more weather resistant, so the details in the carvings remain exquisite despite some of them having been walked on for centuries. Because it's a bit off the beaten path, you'll also find it a respite from the maddening crowds.
 
Oh yes, I had forgtten about Banteay Srey. Well worth it and you can have some great photos with the couple of "ponds" behind the temple.
 
In all honesty, drop Sihanoukville and go directly by boat to Koh Rong Samloem.
Rent a bungalow for USD 25 a day and chill. No roads, a few hours of electricity and the whitest beach you'll ever see :)
