I think that's a fine philosophy, Joe. Simpler, and you're likely to enjoy your photography more when using the gear you like to use! :)
 
I carry an M2 (or another M2, or the other M2, or the M4) with 50mm or 28mm almost all the time. When I go out for square I carry Rollei 35S along with the Rolleiflex. I pair the Graflex days with the IIIf and the Collapsible cron. Only the 6x9 Fujica go by itself as usually I shoot a day story of 8 with it.

No philosophy but rationale:

quality images - quick to use - small and light - carried as one complete unit with no extra lenses or bags or separate meter - easily stored unobtrusively and safely under tables at cafes and restaurants away from kicks, food and drink - not ruck up clothing when carrying thereby avoiding negative effect on appearance and negative comments from wife - a pleasure to use and be in the company of.
 
I have 2-3 kits.

My work shooting kit, where size/weight has to take a back seat to performance.

My "I'm going street shooting" kit which is based around a 5D, but I've also got great results from the RX100.

Last time I was away I took the 5D and the Ricoh GR, the 5D didn't make it out once, the GR was so fantastic.
Since being so impressed by what APSC could manage I've also added the tiny 100D.

now if I'm going somewhere and don't want to carry the gear, the 100D and a pancake fits in a pocket, as does the GR.
 
I have cameras so that I can use them. I have these two that go everywhere with me, for the most part.

As much as I travel, I do worry about theft, living in Baltimore, I do worry about theft, but I did not get cameras to keep at home on a shelf. If they were to be stolen, I'd be mad, i could not replace them right away, but I would.

I have thought about getting another contax t2 or similar for when I'm out biking, just because I worry more about falling and breaking cameras than theft. Maybe a fuji klasse w.
 
M6 with a summicron-c 40mm. Loaded with either tri-x or portra 400. Not the least worried about theft, but I have a spare m6 in case I somehow would manage to break it. It's a hardy combo though. I go biking or skiing 3-4 days a week and the camera has taken some pretty nasty falls but still runs like clock work. I have a nikon d700 with the holy trinity of lenses collecting dust in the cellar. The mamiya 7ii gets less and less use as well.
 
Smartphone is your everyday kit...I like my Oly Pen and two lenses, 9-18mm, and 40-150 mm, extra battery and the electronic viewfinder. One card and my Domke Bag.
 
Currently it's Panasonic LX100 and a film body of the day. When at work,I still use old D700 + 24-70 f2.8 (mainly, my bag has mostly few primes too and one ultra wide). When I'm not working or customer wants film images (in future that's all I'll offer, no more digital for me), it depends on subject and film format. In 35mm it's F5 with FG20 as back up, or one of my LF cameras.

But really the only consistant everyday camera is LX100. There are tons of film cameras and lenses around that I really enjoy using, I just pick one, load it and I'm happy. When I travel it's mainly LF gear these days, when I wonder around at my home town it's something smaller, like Kiev 4a or Olympus 35rc.
 
The Leica 109 for digital and the Nikon F100 for film.....done.
The others just stare at me from the shelves crying.
 
A Ricoh GR and an iPhone live in my purse and if I take another camera, it's my M9-P, with either the C Sonnar 50 or the C Biogon 35.
 
No "lesser than" kit here.
At the moment it's an xpro-2 with 27mm to keep things nice and compact (it's actually the only Fuji lens I own).
Sadly my Ricoh GR is having a bit of an attitude problem with the live-view on startup, but that otherwise would accompany me pretty much anywhere - though by no means "lesser".
 
Eight months of the year I keep an X100s in one car, Panasonic GX1 with the 20mm in the other.

In hot summer months I just have to remember to bring something with me.
That will be one of the above or the XPro2 with either the 18-55 or the 35 f1.4.

A tripod (medium duty Manfrotto and Gitzo) remains in each vehicle year round.
 
Every day kit? These days I only ever carry 1 camera + 1 lens and a spare battery. Always. Any more leads to uncertainty for me and indecisiveness. Light & Lean. :angel:

Will be an M6 + Zeiss 35mm f/2 or more usually a compact in the shape of either a Ricoh GR1V, Contax T or a digital Ricoh GR II. All depends how I feel on the day.
 
Currently I take my recently re-adjusted Zeiss Ikon and the Voigtländer 28mm f/3.5. Nice combo.
 
For a long time I carried two bodies and a 50mm, 35mm and 21mm lenes in a bag. Now I carry my Leica II with a 2/5cm Summitar or a 2.8/3.5cm Summaron mounted on the camera and the other in my pocket. I have a Gossen Digisix meter in my shirt pocket. I often times go out with just the one body and a 35mm attached since that's what I most often use. Life is much easier now. - jim
 
everyday kits...

I carry too much stuff, and it's stifles my shooting. Analysis paralysis sets in. But i just can't beat the just-in-case-itis.

I don't hesistate to carry the spensy stuff, though I do sometimes worry about it getting stolen out of my parked vehicle.
