in the UK a bag man is a bookies assistant who carries the bag with all the money in it. Usually a big burly chap to frighten off any potential bag snatchers. Only thing is their bags usually look like something Mary Poppins would carry.

Joe, I don't know the cowboys you've met, but the ones around here in North Texas use either burlap/leather sacks or nylon/canvas duffel-bags (made in China, of course)
