Gallery Collections

I have created a couple gallery collections. How do I assign existing images to collections? (Or does it only apply to new images?)

I'll guess that you're not seeing the data entry fields on the left between the Notes field and the Comments field? Click on "Show/Hide Photo Detail Editor" in that area and you'll see more, including a pop-up menu to choose one from your Collections list. This selection/assignment can be done or changed at any time.
