Multishot technology is pretty cool, but it seems like nowadays the 5D2 and D700 are good enough for most things.

When you are into selling a niche product you have to keep upgrading otherwise your revenue stream just dries up. Some people just don't realise that there is a point where more pixels don't help. Its a bit like music. Everyone accepts IPODs as good enough. Hi Fidelity is for geeks and nerds.

So why can't we just take a few shots with a normal camera and combine them? There must be some software cheaper than a hasselblad that could do it

So are we saying that what comes out of an M9 or 5DMKII or D700 is not much good comapred to what is possible ? If that's the case then why are they so expensive?

They have had MS since Imacon days. The chip itself moves the width of a fraction of pixel. It's not stitching. It's not strictly a software solution. I work with an older back at work that has this feature. Leaf does something similar too. Higher resolution, cleaner, and for what I do the critical thing: no moire patterns. It's a studio machine. The camera will do single captures as well. The files are pretty impressive.

I'm certainly not saying that these cameras aren't satisfactory. All I'm saying is why pay $40k+ or however much this hasselblad is if you can pay $7000 for a M9 etc and combine a few images for a image as high in resolution?

It's not panorama stitching. I believe it shifts the sensor in pixel or subpixel distances, sort of countering the bayer filter. Oops, someone above already clarified it.

Yeah, because we all know that the M9 is the epitome of getting the most bang for buck 😀
