I wouldn't call 5 days long but that's another matter.
3. Digital (used to be a canon g3, now a minolta 5d) , Film (minolta 7 or manual one (rangefinder or slr), depending) and a point and shoot (usually film)
I used too many (depending on your preferences) of these "()"'s

Usually take 1 dSLR (Nikon), and 1 Canon compact (for videos etc). Problem is my bag is full of battery chargers, plugs, adaptors and lenses. It's way too much. I stick with my 50mm 1.4, and a Sigma 10-20.
HOWEVER. I've a convert to rangefinders. So all the digital stuff have been put away, while I only use one body, and principally 1 lens.

3, I'm afraid. A medium format (usually either 501C or Mamiya 7) with transparency film, a rangefinder with B-W, and either another rangefinder or a manual SLR for colour 35mm.

I've just finished packing for three weeks away, travelling by car (4WD) into some fairly remote parts. Landscape and tourist pgotography only - no urban areas. I've packed the digital SLR kit with Pentax K10D and the old istDS as backup, one zoom lens (18-125), two primes (31/1.8 and 24/2.8); and the Hasselblad with 80/2.8 lens and two film backs, one for B&W and one for Velvia. And a solid tripod with pano head kit. No rangefinder!? No - for the photography I will pursue on this trip the other cameras are a better choice.
Edit - I forgot about the OM2n with the 600 mirror lens - especially for birds and other wildlife. With a bit of luck I'll get some shots of wedgetail eagles and maybe the odd dingo and feral camels.

Okay, I've got it down to 4 cameras for my trip to France for a week and a bit this summer: folding MF camera with B+W film with the possibility of high quality enlargements, 35mm RF camera with interchangeable lenses (28, 35, 50, maybe 90) for day to day B+W photography, a P+S zoom camera with colour neg film for family photo album prints, and lastly, one I could leave out if I really had to, a Bessa L with dedicated 21mm lens.

My summer travel is usually for scientific fieldwork, with strict documentation needs, and in the past I have carried as much as Nikon F3 and F2A bodies, a Leica IIIf and a Rolleicord, with assorted Nikon SLR lenses, including an 80-200mm zoom and a 300mm 4 AF. Too much.
I got a D200 this year, and this season it's going to be the DSLR, a portable hard drive and card reader, 3 lenses, an FM2n body, and a Perkeo II. That is light for me. But it should be pretty much bomb-proof in terms of equipment failure insurance.

I will have a three week trip in May to the Middle East.
I am now trying out the lenses and cameras that are possible choices for the trip.
Going light should be a major factor when traveling if you also want to enjoy the travel.
Leica CL and Contax T2 are the top choices right now for a travel combo.
Lenses: Canon 50/1.4 is the main lens. A wide angle lens could be the Canon 28mm/3.5 for its small size or the CV 25mm/4 for the extra coverage.
Another possibility is to have a MF but light camera such as Graflex XLW with its 47mm lens.

Three days in Boston (by Amtrak) and three days in the Berkshires
(by car) - two months apart - is all we can afford this year.
I plan to take my Contax T camera.

Raid, how will you handle colour and B+W film?
My problem is that I shoot mainly B+W, process and print myself, but some images scream colour, and colour print film is great for a vacation album.

I just got recently some Kodak ASA 400 film with vibrant colors to be used for market/bazar scenes, plus ASA 160 neutral color film for portraits.
For B&W, I will leave true B&W for MF if I decide to use a MF camera. I would then mail the film to Dwayne's Photo. They charge the same for B&W/color MF/35mm when it comes to developing and scanning ($5).
For 35mm, I may use Kodak C041 B&W film. I am out of XP2.

Social Documentary
Usually 2 (around 80%) of the time, unless I anticipate a special need at my destination, in that case, I'll bring along a 3rd.
Example -- in a few weeks, I'm leaving on a trip that includes Petra, Jordan.
I know I want something wiiiiiide. I will have a film RF and a DRF, and multiple lenses.
My widest RF lens is 21mm, so if I want to shoot color images @ Petra, I could either use color film or bring my DSLR and a 12-24mm lens. Since I plan to shoot A LOT at Petra, I decided to go with the lattter. So, I'll have 3 bodies with me.

I'm going to Tokyo next week and i'm taking my M6 (for b@w) with Summicron-c 40 and Summilux 50, my nikon F3 (for color) with 20mm, 35mm and 85mm and finally i chose to take with me the Yashica-d for square pictures. Everything will be packed into the Mekko F2 and i take with me the Domke F5xb in order to hangin out lightweight. I had a hard time to decide this gear list...

Two, for three reasons. The obvious one is that you can change your mind depending on the situation you are (dslr either film), the second, equally obvious, is that in my bag I can keep them both and three I'd never leave a camera alone home!
Usually, the only thing that I don't take with me is the 70-200 which is of course quite bulky.
Daily, au contraire, I chose it depending on the situation, so I can go out with my F6 or D200 ready to shoot.
However, if a valid FF DRF camera could come out soon maybe I could completely revise my bag... but also with a Zeiss Ikon that I like so much.. all games will be over next February, I guess...

Poor art student
When I'm at home I always have my D80 + 18-200
And I'll either have my FE2 or AE-1 each with the 50/1.8
If I take the Canon I'll have the Nikon 50/1.8 in my bag for use with the D80 too.
I've been travelling for a few months though and I brought with me the D80, 18-200, 50/1.8 and I bought an R3a avec 40/1.4
