FYI if you're going on Skyline Drive don't expect to be going very fast. Speed limit is 35mph.
There's actually a very funny piece on Top Gear about Skyline Drive/Blue Ridge Parkway: https://www.youtube.com/watch?v=JOOrf6QgRcQ
If you're going through Montana and Wyoming, you cannot cannot cannot miss the Beartooth Pass. Pirsig did it in '68 on his trip aboard the CB77, so if there was an interest to pay homage to the 'Zen' ride, well the Beartooth would have to be part of your itinerary.
And I don't know why a /7 would be more comfortable or a better choice than a CB750 -- the CB750 is as reliable as the /7, has a smooth-running inline 4 engine (and more horsepower than the /7), and is pretty well the same stance/riding position as the /7. So really, I personally can't see the advantage of one over the other.
Aesthetically, well that's in the eye of the beholder.

Hi Vince,
Both the cb750 and the BMW have a fine but different style and refinement. I can't go wrong with either. At the moment, I'm in love with the Honda.
I've seen the Top Gear bit on Skyline Dr. Would you suggest an alternative southerly route? I need to end up in Memphis.
Thanks.

All depends on whether you want to go fast, slow, or somewhere in between. If it's somewhere in between, how about Rt. 15? You can get to it off the NY Thruway (390 south becomes 86 south becomes 15), and it will take you south to Harrisburg and onto Gettysburg. Head south from that to Frederick, MD, then west to Winchester VA. Then jump on Rt. 11 -- nice thing about Rt. 11 is that if you get tired of it you can take I-81 right next to it. Both go through Tennessee.
If you're on the Blue Ridge/Skyline Drive, you're kinda stuck on it for miles until you can find a way out to get to the Interstate. Don't get me wrong - the Blue Ridge and Skyline are both beautiful, but you won't be getting very far very fast on them. Here again, depends on how you want to do this trip and how many miles you want to cover in a given day.

Thanks, Vince. Definitely no interstates. I don't need to get anywhere in a hurry, because I'll be retired!

Had a closer look at your map -- are you heading out towards Ottawa? If so, are you going to be spending any time around the Rideau Lakes? My wife and I stayed at this place last year, and it was as about relaxing as you could possibly get: http://hotelkenney.com/

Good to see the site, Frank, and congratulations on getting on to the next phase. I hope to learn from what you share in the world of post teaching/academia.
The map show you may be coming up Highway 99 in Oregon. If so, give a holler when you're headed toward Eugene. I have a guest room out back if Eugene looks like a logical sleepover stop. Equipped with a nice understated Canadian commode from 19th c., no less.

If I may make a route suggestion for a route from north to south in PA take a look at this link.
https://goo.gl/maps/hcMk3
Rt 144S (from Galeton, PA)to Rt 44S to Avis, PA is about 65 miles of beautiful mountain scenes. Only one stop sign just south of Galeton(about 11 miles) Only one gas station along this road. A couple of very nice overlooks.
I've photographed many of my Hunting Camp Portraits along Rt 44.
Once you get south of Williamsport, PA you’ll follow Rt 15S along the Susquehanna River for about 50 miles or so until you get to Harrisburg, PA.
