M6, 35/2.0, and either BW400CN or Tri-x, depending upon your final output (optical+enlargements, Tri-x...scanning/websharing+enlargements, BW400CN).

Also, a little digi P&S to slip into a pocket for when you go to dinner and need a flash but don't want to drag a camera with you.
 
TMY2 is what I have in mind (just like you, I like the idea of using a 'local' film). As a matter of interest, did you prefer your colour or mono results?

Still scanning the color ones, so I can't really answer just yet. I have been shooting B&W exclusively for a while, so shooting with color has some novelty to me. Plus, since I scan and print digitally, I can convert to B&W, although only one or two so far seem to call out for conversion.
 
Sounds ike it's a dedicated photo trip. Are you into medium format? I'd take a pair of Fuji GS670ll's, one with 100 speed film, the other with 400 speed. If I had one, one of the cameras would be a wide angle version.

No need to travel light because you are travelling by car.

I'm planning on M6ttl+50mm Cron and M7+35mm Cron +28mm Ultron for tight spaces. I could take some more kit but the general theme of the comments so far is to keep things simple. I definitely wouldn't take only one camera in case of a breakdown/accident etc. In my experience you need backup...

I expect that will work. So much of this depends on what you, as an individual, like to do and the places you visit.

I agree that medium format is very tempting and I frequently use a Bronica SQA with a 50mm, however I tend to use either 35mm or MF at any one time rather than combine the two. Again, I also find it can a bit confusing to take more than one film stock as in the heat of the moment one can load the wrong type by mistake. One film stock also makes metering easier if you use a separate meter, which I do when there's time.

As you say, it's possible to take some extra gear when travelling by car and to have a smaller walkabout bag for a couple of RFs.

I like your idea of 'light' and 'heavy'. My walkabout kit consists of two Leicas with 35mm & 50mm mounted and a 28mm just in case -- to me that's quite light but maybe I need to reconsider this!

what gear (cameras, lenses, film) would you ideally take with you?

Probably your last acquisition if like me you're collecting cameras 🙂

I would thus bring my Praktica BX20 with a selection of Zeiss/Pentacon glass (28, 50, 135 and maybe a telephoto zoom). Err no this is RFF so I'd take my Olympus XA. Or a Mamiya 135 like I did last year.

The film selection would depend on the destination and amount of light you're expecting to get there. I have currently some Fomapan 200 rolls in my fridge so that's what I would take. It's a big pain over here to find a good selection of B/W film in any shop. I consider myself lucky if I can find some color film already 🙂
