It's been mentioned perhaps once already, but I will second In The Mood For Love (2000), dir. Wong Kar-Wai. The rich colors, inventive reflective angles, and elegiac half-speed scenes of the film are simply superb.

Most of Leone's work ("Il buono, il bruto il cativo" is my favorite)
Days of Heaven was already mentioned, but I also liked cinematography very much in "Thin Red Line".
