Hi I just starting using a Nikon fm and noticed the longer side of the aspect ratio is too long. Or the short side is too short. Is it the camera? The scanner? I’ve noticed this ok other cameras too.

You mean you're not getting the full frame on the film?

I should have tested further before starting a thread. It's the EpsonScan software as far as I can tell. If i let the software automatically define the borders of the negatives in thumbnails, it cuts off the longer edges. I manually chose the placement and just about perfect 3:2 ratio is there. How do I teach the software to scan the whole image automatically? Scanning 37 shots by manually selecting the borders is a bit too much work. I do that for shorter medium format rolls, but not 35.

All of my 35mm cameras have minor differences in aspect ratio. None of them are ‘exactly’ 3:2.

When using Epson Scan I always have it set to scan slightly larger than the frame (taking in a bit of the border on all sides), then do the final crop in LR. I’ve found leaving the final choice up to the scanner is a bit hit and miss.

How do you set it to scan larger than the frame? This is how much mine is off. The black and white in the center is the scan, the red outside is the actual frame.
...can't figure out how to post an image straight from imgur yet... but it's here https://imgur.com/a/OnqhcsI

Don't quote me because it's something I struggle with as well but try "unlocking" the settings for the image size first, then select custom, and draw the shape you want, around the extremities of the image (plus some to crop off later).
Make sense?

I can't connect to my scanner at the moment (which means I can't open EpsonScan) so this is off the top of my head...

If you are scanning in 'Professional Mode', at the bottom of the page there should be a 'Configuration' button. Click through to that and you can change the scan size (I can't remember the details).
