I'm also going to Rome in April, and have been giving this same question serious thought. For what it's worth, here's what I've concluded:
M9 and M7 bodies, with either Across 100 or HP5+ in the M7 (I love PanF, but don't think the light will be bright enough that time of year). As for lenses, 35mm and 90mm and might through the ZM 50mm Planar in since it's so small. Plus I'll probably buy a 15mm and 25mm before the trip so I've got wide and really wide. Also going to take my Mamiya 7ii with the 65mm and 150mm lenses.
One camera in hand, the other two plus the lenses in a small backpack with the iPad. Not that much to carry really and provides versatility. Hopefully visiting Italy won't be a once in a lifetime trip, but plan to take wonderful pictures with the cameras I love traveling with.

I agree with the folks that said to bring both. The Nex for color/wide angle and the M3 for black & white. Sounds perfect to me!

+1 I can't speak to Rome in particular, but I'm planning a trip to Scandinavia and England in July and will be taking an M2 and an Oly E-PL1, w/ the digicam for indoors, color, and as backup. And the ability to use M-mount lenses on the Oly is a plus.

NEX and M3 and all sharing the same lenses. All but stopped using the Sony kit zoom lens.
