Does this mean that you don't have infinity focus issues with fast lenses at largest aperture?
Nope. It's a helicoid, so, once you get to your mfd, you turn the focus ring on the adapter. With my lenses, I actually have better infinity focus than I do with my other M adapters.

- Noise levels. The Nex-5 is not a quiet camera. I'd need the 7 to make some serious progress in this regard.
Steve Huff mentions the shutter noise in his first look at the NEX-5N. Check the video at 1:30: http://www.stevehuffphoto.com/2011/08/31/the-sony-nex-5n-first-look-thoughts-and-video/

My critical requirements are, minimal EVF lag, ease of accurately focusing the 90mm, corner performance with the 21mm and ISO 1600 performance. If any of these isn't reasonable, I'll wait for Fujifilm and Leica.
Can't help for the first three points, but there is a ISO test going around the internet: http://www.dslrmagazine.com/images/stories/Ferias/IFA-2011/IFA-Sony/MSF_IFA_NEX_7_Noise_AAA.jpg
It looks good to 1600 for me, with 6400 being acceptable as a stretch. Of course, that's subjective.
