From what I've read on-line, the diff between the J and F 803's is the material: ballistic nylon (J) and cotton (F).

The 802 series are deeper bags, not the best for cameras. They are like briefcases, not camera bags.
I use the Domke F-802 as my daily commuter/camera bag. I love mine, and it works for me.
I usually carry one rangefinder body w/lens attached, a 2nd lens and a few rolls of film in the pockets, my newspaper, a paper sack lunch, and a note book. I also use it as my "camera bag" when I go on extended trips.

I'm on my second one. Retired the first 802 after about 12 years and many miles of hard use. I wish Domke would sew leather corner-protectors on the bottoms. That would certainly make the bag more durable.

I have a Domke FA-230 3-Compartment Insert (made for your smaller 803), but it's rather meagerly padded. Most of the time I don't use any inserts at all as I pack only one body with lens in the main compartment, plus my lunch. Just be careful and don't drop the bag, though!
Any other manufacturer's inserts that are 3-4" wide would work. You may already have some on hand if you are a camera bag collector, as I am.

Although not a satchel, the little bit smaller bag isn't bad for traveling with. Also, from the B&H site:

Although I prefer the 803, when I was using my Mamiya 7, the satchel wouldn't work, and the F-6 went with me on extended trips to Bolivia and India, and shorter ones to Mexico. It has a nice hidden pocket under the top, as well. Too nice. Once I went crazy searching my hotel room for my plane tickets, when I had stowed them away in that pocket.

the f6 is a great bag especially if you don't like the satchel type.

The J-803 is a wee bit bigger. I can stuff a ThinkPad into the magazine slot on the back, which I can't do with a F-803.
