I have a yashica fx3 with yashica ml 50mm f2.0 and a Spotmatic with a takumar 1.8 55mm.
In term of quality what is the better lens in term of color, sharpness and quality?

As has been said before, condition of the lens has a great deal to do with its output today. That said, the build quality of the Takumar is very good and it seems to have that "something special" of Takumars of that era. The contemporary Yashica 50mm f1.8 is also very good. The ML I suspect benefits from more modern coatings.

Pretty much all 50mm lenses are at least very good. Individual lens sample variation due to its history can be significant. So test your lenses.

No kidding, My Super Takumar lenses would love to have their negatives enlarged in the facility.
But to the OP's point. Either lens is going to give you good quality. A tripod and careful focusing will be much more important. Don't be fooled by names or ads, their have been many great lenses made for the last 50 years. And most of us couldn't tell the difference.
