Yeah, I know. My dad built one from scratch (not from a kit). It's currently owned by Stanford University, in large part because he couldn't afford to keep it (I'll try to post a photo of it, taken (on-topic) with an M3 and 50 DR, later tonight).
But the relative scarcity of harpsichords is not why Gould and Richter played Bach on pianos. And B.B. King chooses his endorsers -- not the other way 'round.
It's about clamping some parameters so that you can exert maximal control over the rest. This, by the way, is not an approach that is limited to art. It is also a key to doing good science.

Just for the record, lots of guitarists use more than one guitar to obtain different sounds appropriate for the song being played. And drummers use more than one drum.

And some, like Roy Buchanan, got different sounds appropriate for the song being played from just one. In Roy's case, a Telecaster.

I think it makes sense for a minimalist setup ...for all the reasons stated in the previous posts.
If I were to do this, I would go with my m3 with my 40mm cron, while having the flexibility of film choices. I wouldn't necessary go for a full year without variations, but instead try it out for a quarter or even restrict it for certain usage, eg. local shots vs. overseas shots, or everyday camera versus one-off shots.
I would embark on this mainly because I want to focus on composition and spend more time seeing rather than snapping away (even on a film).
