I will be bringing my M6 with 35/2 as my main camera.

Backup can be a IID with 50 Elmar.



The other lenses I have are: 90/2.8, WATE, and 50 1.1.

Should I bring a second M6 or an M8? Which lens/lenses should I mount on said camera?

I'll be up there over the Memorial Day weekend.
 
If you intend shooting in Manhattan, then WATE could be helpful - overall it really depends on what style of photography you like. Ralph Gibson was often laughing at himself, that he takes the same kind of photos all over the world.
 
bring the lens that you use and comfortable with the most, chances are you'll gravitate to those.

im a 35 and 50 shooter and those were the only focal lengths i used in nyc last week.
Ricoh GR in 35mm and Hexar RF with 50mm cron, also had my 35 cron just in case but never used it.
I cropped the GR to 35 as I felt 28 too wide for my shooting preference
 
Are you saying somewhere secure, where you can leave gear you aren't using?

If so, I'd go with:

M6 with 35/2 and 90/2.8 as walk around kit to give you a range of options
M6 50 1.1 to take out in the evenings. Bring another M body as a backup but don't bother taking it out with you.

That isn't far off from the kit I took the last time I went (though I also took a Rollei 3.5F in case I found myself in a TLR mood).
