which photographer would you want to talk with?

Vivian Maier, but I fear it would be one-sided. I would love to learn what she saw and what she looked for. What she found is amazing, to me anyway.
Looking at Vivian's work, and watching the documentary, would give a fair idea of what she saw and looked for. She seemed obsessed not only with the everyday, but with crime and violence.

I'd love to talk with Elliott Erwitt, Mary Ellen Mark and Andre Kertesz. They are documentarians of the highest order, perceiving moments, emotions, angles and light in ways that I can only seek to study and emulate.

Read one of the biographies. It was much more complex than you suggest.
