DoF is also different because one of factor is CoC, which is based on how much you are going to enlarge the negative.
No - DoF is the same! Try taking one shot in pano mode then one shot in regular mode DoF does not change. It is the same image - just narrower. CoC can change as the viewing distance and magnification are likely to be different

The DOF scale on the lens is for pano mode, then if you switch to normal you are just "cropping " in camera, so if you don`t move or change your distance, the DOF doesn`t change. I use hyperfocal for most of my xpan stuff and find it works well.Best of luck.

Again no - the DoF scale is for the focal length/filmplane ratio, it doesn't matter what the image size is. Just look at the DoF scale on a zoom lens to see this - changing the focal length changes the DoF.
