Joe, the real question is how do you trigger the "shutter"?
- Poke the "button" in the Camera app screen (awkward, jitters everything).
- Touch one of the volume buttons (better).
- Hit the remote (e.g. Muku Shuttr gizmo) in your other hand (better yet).

I believe you can use the volume button on your iPhone headphones cord.

BTW: My best pocket camera, well my only truly pocketable camera, I've got this little fuji Tiara with the sharpest little lens on it. The sort of camera I would take for Sunday afternoon drinks by Sydney Harbour at an outdoor venue or perhaps to a flea market or craft fair or a car show. I almost exclusively shoot Fuji colour film on it for a few reasons but mainly because that's the sweet spot for this camera.
 
Fuji Tiara (28mm) or Fuji Tiara Zoom (28-56mm). Features a great lens, fill flash or no flash settings, quickload and even programmable zone distance. All in the size of a pack of cigarettes and less than 250g.
 
These days, my daily camera is the Sony A7R with a Sony 16-50mm, to get an FOV equivalent to 24-75mm.

Yes I'm crippling the A7R to 15mp, OSS doesn't work and this is not the greatest lens in the world but it makes for a compact kit.

After all the best camera is the one you have with you.
 
What are the film point and shoots with the shortest shutter lag? The olympus Mju was just too slow for me

My LX7, which isn't that fast, is a rocket ship in comparison

I recently acquired an Olympus Pen-D E-PL7. Fitted with Lumix G 14mm f/2.5 lens, its very handy and fits in my vest pocket easily. Same for with the M.Zuiko 14-42/3.5-5.6 EZ lens (along with automatic lens cap), albeit it's a bit heavier than I like in my pocket.

However, it's MOST pocketable when fitted with the Body Cap Lens 15mm f/8 or Body Cap Lens 9mm f/8 Fish-eye. These lenses weigh nothing and are vary thin, manual focus, only f/8 available. The focusing mechanism incorporates a lens cap so the lens is protected when you slip it into your pocket. Example:
