I currently use an Epson 4490 and create raw scans at 1200ppi and use colorneg to invert and color correct. Will I be gaining anything if I upgrade to a v500 or v700?

If you are only doing 35mm and only at 1200 dpi, then probably not.
If you want to scan at higher resolutions, I think the V700 is supposed to be better. Of if you need to scan large format...

Between the 4490 and the V500, it depends on how much value you put on slightly better dmax and faster warm-up time.
