One at a time :D
But seriously, I find it a pita to carry more than two. Generally, one will be a dSLR and the other will be the guest camera for the day - whether it be a view camera, RF, folder, etc.
 
Three at most:

One 35mm camera colored negs (be it SLR or RF)
One 35mm camera BW negs (be it SLR or RF)
One medium format (usually colored film)
 
I use constantly the 8 cameras I own. Arca Swiss and Hasselblad for large and medium, 2 Nikons (mechanical and electronic) and A Fuji digital for Nikkors, and three Bessas.

My favorite system?

Hasselblad.

Canon 7, Canon 400D, Canon Elan 7 (3x), Olympus μII, Mamiya 645 (my favorite). Also used to have a Linhof 4x5 monorail, a Yashica TLR that I need to have fixed, an Olympus half frame I really miss (broken), and an 8x10 Deardorff I restored and later had to sell for financial reasons. Equipment comes and goes, but the photography always continues.
 
Regularly:
Dynax 7 and Dynax 7D for wildlife
Bronica ETRSi for landscape
Leica Digilux 1, Yashica electro 35 GSN, Canonet 17GIII, Minolta Hi-Matic 7S for Cityscape
Kiev 4 for people and B and W cityscape
Only a few times a year:
Minolta SRT 202
Minolta XD 11
Zeiss Ikon Icarex 42M (my father's camera)

And now looking for either a Fuji GSW690III or Mamiya 7 II for landscape
 
i've got (i think) 8 cameras, but usually i use three of them: bronica ec-tl, yashica d and (diamond in the crown) rolleicord II b mod. 3. but if i can't use mf camera, my first choice is yashica electro 35 gsn.

Depends whether it is on an overseas trip via a flight with 5-7 kg hand baggage limits.

Current minimum 2: OM4 and X-Pan 1

I usually carry a second OM4 body and sometimes a Horizont 202
