Am taking a trip soon to Peru and want to travel as light as possible. Would like to shoot b and w as well as color. How well would shooting say Ektar 100 only and later converting it to black and white images work vice taking two film bodies. Have never used any type of digital post processing.

Or leaving film M's at home and taking X100 which is a distance 3rd choice.
 
It's pretty easy to desaturate, it can work quite well. But yes, test it first to see if you like the results, as your view is all the really matters. 🙂
 
This is what I did on a November 2012 vacation to Hawaii (celebrating our 36th anniversary):

Brought a Leica M4-2 with a 50mm Summarit lens. Black & White film only. Acros 100 only film I used. Used 18 36 exposure rolls. I bulk load my film. Wish I didn't bulk up so much with my body!

Brought a full frame Canon Digital SLR with a 24-70 f2.8 lens. RAW capture. Every photo in color. Didn't need to bulk load anything. We also brought our iPhones and to be quite honest they made pretty gosh darn good photos. And videos!

Worked out just fine.

If you're only shooting one type of film, I'd probably make it a 400 speed like Portra 400, it's just a bit more flexible. If you're happy with 100 ISO though, then your plan seems a good one to me.

I'd take a second camera too as a backup, a little compact would do, a Rollei 35 maybe, or a cheap body for whatever lens mount you use. That's just me though, chances are your one body will be fine, I'm just paranoid.
