I have an iMac with the 24" screen. Definitely get the largest screen, largest hard drive, and maximize the RAM. I have 4GB in mine, and it does everything I need it to. Adjusting the lights in the room where I work has made the glare a non-factor. I have two LaCie D2 drives for photos and backup, plus an assortment of other LaCies for other things. I definitely recommend AppleCare extended 3 year warranty. The LCD developed a "banana bruise" in one area - sort of a brown spot - and Apple looked at it, saw that I had Apple Care, and switched it out for me in about 24 hours. But then, the NYC 5th Avenue Apple store is right in my neighborhood, so your mileage may vary.
I also have a 12" iBook G4 that still runs like the day I bought it. Great little computer. It even handles Lightroom 2.0 and Photoshop CS3 no problem. I'm getting a new laptop this year, but the performance of that little iBook will be hard to beat, even with another Apple.
edit: Oh and you can save a bit of money by getting your memory upgrades at Ramjet. I have their memory in my computers, and I've never had any incompatibility issues. Nor has anyone I know who uses their memory.
