Incident

I used to set exposure with an incident meter with my film cameras and got excellent results nearly every time. I think I will try my ancient Gossen Luna Pro with my digital cameras. I think it will be a nostalgic experience.

I use a digital incident meter with film. Thing is I started using a handheld meter after I got into trouble when going digital. Just couldn't get exposure right. So I started learning about light, using a meter and a bit later went back to film.
 
As you point out, the object is to be all set for the next shot at a half second's notice and with good exposure, preset manually.
A lot depends on what you are shooting. Maybe I'm lucky, but I really haven't had a problem with blown highlights. I do use the exposure compensation dial when called for though.
