I'm new to Canon rangefinders and I recently purchased a Canon VT and Canon P. Until now I've used a Leica IIIc and all my lenses are Leica manufacture. Question: aside from the collapsable lenses which appear like they would contact the light baffles, are there any other Leica lenses i should avoid using?

Only the 50mm Elmar, Hektor, and Summar collapsible lenses are trouble on the "baffled" Canon rangefinders. The 50mm Summitar and Summicron are no trouble, the ball and groove prevents the top bayonet tab from hitting the top baffle.

There's no other Leica lenses that scrape the baffle. Some 35mm Jupiter lenses are trouble, some aren't, depends on the diameter of the rear element.

A 50 Elmar can collapse fully on a P, but you have to rotate the lens barrel very carefully as you collapse it to avoid scraping the baffles . You can't just push it in as you can on a Leica body.
