I figured out how to get a) more highlight detail + b) less shadow noise with the GRD I; but it only works if you are using it as more or less dedicated B&W .jpg camera.
Set your manual white balance against a magenta color. It should tint your color pictures green/yellow... but in B&W mode it seems to cut off the red-channel a little bit, thous lowering the red channel noise and retaining more highlight information.
Left side: auto white balance; right side: manual white balance on magenta
both were unedited and shot with exactly the same settings, light did not change as both were shot within 5-10 seconds
Even when setting +2 contrast in B&W mode it retains more highlight detail vs. medium contrast B&W with auto-white balance.
Maybe this information will help some GRD I users with their highlights

That's it! I think my search is now over for a compact point and shoot. These pics are phenomenal. I would love advice on a particular model that is recommended? I am looking for used if possible and would like to stay under $400.

You could also keep an eye on KEH. I just got my GRD3 there for $300 and it might as well be new.
