Does anyone have experience using both the Canon and Epson scanning software that is bundled with their scanners? Is there any difference in their ease of use or the output?
Thanks,

I have both Canon and Epson scanners. It is my opinion that that Epson software is more intuitive and simple. I also like the fact that Epson scanners have a higher film suspension height which reduces the risk of Newton Rings.

I use Epson Software with my V500. It is simpler than others and I've always been intrigued by people that say third party software is better. To me, those third party users are looking for some automation. I use ES software and then after I've adjusted my color and B&W negatives I send them to PSE and do a personal final adjustment. For B&W I use levels and maybe curves (but they are really the came thing) or if it is color negatives or E-6 I use ColorPerfect (which is a third party software, but I find it better at the back end). ColorPerfect does my final adjustments.
You might also look at Swift1's comments here, they are really great for C-41 post processing.
