I have a V700 and a Nikon LS-5. I have been using the Nikon for 35mm of course and the Epson for anything bigger. But aside from chrome, I've been starting to realize that there isn't much of a difference between the two in terms of quality, when you get the V700 scans optimized. Yes it requires heavy sharpening but once you do that the Nikon only has a slight edge, with a very heavily pronounced grain effect. I do notice that ICE on the Nikon works substantially better, and it's WAY better with chrome than the Epson.

It looks like LS-5s are going for about $900-1000, which would be a nice chunk of change for me right now.

I have the original box, the FH3 holder, and it's in great condition.

Can anybody convince me not to cash in on this?

Good enough is a personal decision. If you need the cash, you need the cash. You won't have any trouble selling such a fine, high performing piece of equipment.

Sounds a bit high for a V but go for it.

I have seen them lately for mostly around $750.
Missed one for $300
