for stealth my best bag is a canvas book bag i bought at the university book store years ago. i then went to the local camera store and found an insert from a 'real' camera bag that fit it perfectly. i ordered just the insert and it works great.
nowadays, i just might use that camping (thin) foam (blue stuff) and duct tape to make my own insert. that's what i did with my used domke.

I use the LL Bean Healthy Back Bag, which doesn't look like a camera bag and is stealthy enough in most places. It holds my Bessa R2 (in case), 90mm Apo Lanthar, Olympus Stylus, lots of film (never really counted), Day Timer, with room left for maps, guides, etc. When flying, my meds, book, plane tickets also go in there. Lots of room and easy on the back & shoulder.
