A few years back I suggested just such an EOS as the OpenEOS here on RFF (CLICK). According to this article, tech radar (CLICK) , Canon basically moved the mount back such that the adapter simply connects the contact points, point to point.
But, it isn't "open" (or is it?), and it is missing what I think is the most important feature of any camera: a manually released, spring loaded shutter. I wrote about it on this site and here (CLICK).
Other features would be autofocusing in the adapter, and slide-in optical rangefinder/viewfinder that connects to the electronics to determine focus.
Even better--a flim back!

As an aside, is the EOS throat wide enough to handle 120?
