I've experimented with this some over the years, not so much because I was hiding--in fact they usually knew I was right there--but whenever you raise the camera to your eye, the mood/setting/atmosphere changes, and it's not the same as what inspired me to take a picture in the first place.
These are just a few of my experiments with this, admittedly amateurish....

With my D700 and 24-70G (no longer own, even though the D700 files were gorgeous - I just don't have a lot of desire to carry that kind of package around). Set the 24-70 to 35mm give or take and tried to surreptitiously take some photographs of my grandfather on one of our job sites.
I've been playing with this one ever since - I like the light coming in through the window, and it seems to work in different ways cropped square, 8x10 or full frame.
