Not ranked in any particular order:
Nikon FM2n
Near perfect balance of size, weight, usability. The FE2 is close to the same thing with AE included; the F, F2, F3, and F6 are a notch above on build and capability but larger and heavier.
Leica M-D typ 262
The ideal Leica RF camera for me. All of the goodness that I prized in my film Ms and Barnacks, no added features I didn't want, and full digital capture workflow.
Hasselblad SWC
Of my top five cameras of all time, it's the one I've made the fewest photos with and enjoyed the most. It's a uniquely capable specialty camera with a lens that never stops amazing me.
Polaroid SX-70
... And its derivatives made recently by MiNT (SLR670m and SLR670a). A brilliant design, just the right thing when you want to produce finished work on the spot.
Leica SL
I thought back across all the different digital and film cameras I've owned and have to say that this newcomer just does it all right and better than anything comparable that preceded it. Once I started using it, I knew that if I could only have one camera, this is the one I'd pick in a heartbeat.
Honorable Mention:
Rollei 35S
Have to list one compact here. I still have the Rollei 35S that I bought in the early 1990s. It is the second of the six of them I have owned, still used occasionally, still an outstanding camera for when you want something that really works and takes up little space, gives you full explicit control of focus and exposure. An outstanding little camera.
