I second the suggestion for buying EXCELLENT quality screw-drivers, and working over a plastic tub or a flat, rimmed baking sheet.
Also - lay off the caffeine.
I was going to suggest finding an Argus A for your first tear-down... very elemental in its construction, but a good primer for learning how clock-work shutters ( Compur, AGC ) generally work. The better German shutters just have more( and smaller ) parts to achieve more accurate results.
I would avoid pricey & complex cameras such as Rolleiflex, Leica, Contax RF, Nikon RF as beginning projects.
